This yummy beef mince chilli is a fantastic family meal. Just pop all the ingredients into the slow cooker and your work is done! Leftovers taste even better the next day too.

INGREDIENTS
- 2 tbsp olive oil
- 450 g minced beef
- 1 onion, finely chopped
- 2/3 cup (150 ml) beef stock
- ½ – 1 tsp chilli powder
- 1 tsp ground cumin
- ½ tsp paprika
- 1 garlic clove, crushed
- 3 tbsp tomato puree
- 1x 400 g can chopped tomatoes
- 25 g dark chocolate, broken into pieces (optional)
- 1x 400 g can red kidney beans, drained and rinsed
- ½ cup (85 g) corn kernels
- 1 cup (45 g) fresh coriander, chopped
Instructions
- 1. Heat 1 tablespoon of the oil in a large frying pan. Add the beef and fry for 5-7 minutes or until well browned, stirring to break up any lumps. Remove from the pan with a slotted spoon and transfer to the slow cooker.
- 2. Add the remaining oil to the pan over a medium heat and gently fry the onion for 10 minutes, stirring occasionally, or until softened.
- 3. Meanwhile, place the stock in a small saucepan over a medium heat and bring almost to boiling. Remove from heat and set aside.
- 4. Add the chilli powder to taste, cumin, paprika and garlic to the frying pan with the onion and cook for 1 minute until fragrant, then add the tomato puree, hot stock and the tomatoes. Bring just to the boil, then carefully stir the mixture into the mince in the slow cooker. Cover and cook on low for 4 hours.
- 5. Stir in the chocolate, if using, kidney beans, corn and coriander and season with salt and pepper. Turn off the cooker and leave to stand for 10 minutes before serving.
